Lasagneria Looking to Expand

In the two years since Paolo Grazzini set up Lasagneria in Norwich market, the business has seen more than its fair share of ups and downs. The stall, which sells lasagne, pasta dishes and oven frittatas, has proved extremely popular with locals wanting food on the go, but now Paolo has plans to expand Lasagneria.

He realised very quickly that sales improved in the good weather, making the autumn and winter months more of a struggle for the young business. Branching out from his standard stall offering, Paolo decided to do something different to generate income and held an Italian dinner event on 20th October. The fine dining experience was such a success that Paolo is now looking to host similar events in the future.

Paolo Grazzini says: “One thing I have learnt in the two years I’ve been in business is that organised events generate more income than stall sales. The dinner we hosted in October was incredibly popular and such fun for me as a chef.

“I care passionately about my work and about serving classic Italian dishes, cooked simply but cooked to perfection. I hope to host more dinner events in the future, and am on the lookout for local venues I can host them in.”

At present, it is just Paolo working the Lasagneria stall and catering for big events. Born into a family of chefs, Paolo is the former head of the Grosvenor Fish Bar and says his mission is to bring real Italian cuisine to the heart of Norwich.

He is keen to see the business grow, and is hoping that he will be able to hire additional help in the kitchen in the not too distant future. For this Italian master of pasta, the future is looking very bright.
